Fall Roast Veggies
Ingredients:
- 1kg mixed vegetables (such as carrots, sweet potatoes, beets, onions, and bell peppers), chopped into similar-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 garlic clove, minced
- 2 tablespoons grated parmesan cheese (optional)
Instructions:
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or foil.
- In a large bowl, combine the chopped vegetables, olive oil, salt, pepper, garlic, rosemary, and thyme. Toss until the vegetables are evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet. Roast for 30 to 40 minutes, stirring occasionally, until the vegetables are tender and caramelized.
- If desired, sprinkle the grated Parmesan cheese over the vegetables and return the pan to the oven for another 5 to 10 minutes, until the cheese is melted and golden brown.
- Serve the roasted vegetables hot, garnished with additional herbs if desired.
Pumpkin and Sage Risotto
Ingredients:
- 1 small pumpkin, peeled and diced into small pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 ½ cups Arborio rice
- ½ cup dry white wine
- 4-5 cups hot chicken or vegetable broth
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons unsalted butter
- ¼ cup chopped fresh sage leaves
- Salt and pepper to taste
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
- Add the diced pumpkin to the skillet and stir to combine. Cook for 5-6 minutes until the pumpkin is slightly softened and lightly browned.
- Add the Arborio rice to the skillet and stir to coat with the pumpkin and onion mixture. Cook for 1-2 minutes until the rice is lightly toasted.
- Pour the white wine into the skillet and stir until it has been absorbed by the rice.
- Add a ladleful of hot broth to the skillet and stir until it has been absorbed by the rice. Repeat this process, adding a ladleful of broth at a time and stirring frequently, until the rice is cooked through and creamy. This should take about 20-25 minutes.
- Once the rice is cooked, stir in the Parmesan cheese, butter, and chopped sage leaves. Season with salt and pepper to taste.
- Serve the pumpkin and sage risotto immediately, garnished with additional Parmesan cheese and sage leaves.
